Tomatillo Salsa

·         1 lb tomatillo

·         1 tablespoon olive oil

·         one hot pepper, minced (to taste)

·         ½ lime, juiced

·         fresh cilantro (to taste)

·         sea salt, pepper (to taste)

Peel, wash and dice tomatillos. Heat olive oil in sautée pan. Toss in diced tomatillos and cook for five minutes on high. Toss in hot pepper. Cool. Purée in food processor. Stir in lime juice, salt, pepper and cilantro.
